Lazy girl dinner! Rich and I are suckers for noodles- especially rice noodles. We stopped by an Asian grocery store the other day and picked up a package of dried vermicelli without thinking what we'd end up doing with it.
A part of me wanted soup noodles, but it was hot and humid. After rummaging through the refrigerator, I found onions, cabbage, eggs, meatless beef strips and soy sauce. Obviously it was time for stir fry. I made the sauce with generic soy sauce, garlic chili sauce, a touch of sugar and a couple splashes of Maggi seasoning. The noodles them got soaked in super hot water for about 10 minutes to get them soft, then they're drained. The "add ins" are stir fried in a super ho deep skillet, then the plain noodles are thrown in. Next, the sauce is added. I snipped some green onions from the garden and tossed those in to the mix too. After 5 minutes of constant maneuvering, it's chow time!
Eating on the cheap? Heck yeah! The whole thing cost less than five bucks and we had left overs.
