As an after Valentine's Day treat, I whipped up a super quick batch of red velvet cupcakes. If you follow me on Instagram, you would have seen the video clip I posted! They came from a box, frosting and all. Thanks Betty Crocker.
Okay, I'll be honest.
They weren't amazing like the red velvets I had made before and before that, but they were tolerable. I found the texture to be way too soft, as most boxed cake mixes are. They were too moist and the flavour was incomparable to ones made from scratch. The frosting, was not my favourite either, as it was tooth-achingly sweet and kind of chemical tasting. I enjoyed how easy it was to whip up using egg replacer, but that's about it.
Either way, I ate my fair share. Oink!
