Well, armed with bags and bags of raw cashews, I'm on a mission to make vegan cheese. One that will melt, caramelize and still taste amazing. This was experiment number two and it was reaaally tasty. Almost to the point where I admitted (to myself, and now you) that I could probably live without real cheese. There I said it.
Everything went into a blender and then it was cooked and from there I allowed it to chill. Following that I sliced a baguette, slathered on some cheese-less basil pesto and topped it off with faux cheese slices. I then toasted the shit out of it, or until the 'cheese' got kind of melt-y/brown and ate it.
I proceeded to repeat this proccess another four times until I came to realize that I should probably save some for the legit vegan around here, Rich.
