I didn't make any Halloween themed goodies this year, but I did make a jumbo batch of caramel corn. Photos and recipe to come. Between that and roasted pumpkin seeds, I can't stop munching!

Vegan Vanilla Pound Cake


This is still a recipe in progress, but here it is- a "pound cake" free of eggs and dairy. The texture is denser than a regular vanilla cake, but it's moist with a fine crumb.It's got a nice crust, which is my favorite part of any loaf cake!


I collected the very last of my raspberries and devoured a couple slices of this cake with them on the side. It was the perfect paring of sweet and tart. Absolutely delicious! 

Oh and a little whipped cream didn't hurt either. Yep, whipped cream from a can.



Once I've got the recipe 100%, I'll make a post about it. Until then, enjoy the photos! They remind of me summer, bright day light and warm rays. 

I think a lemon poppy seed cake would be out of this world. Actually, I know it would be! Now, to find a bulk store that as a fresh supply. I've been to a couple now looking for poppy seeds and they've all smelt funky. :P

Foraging for Apples


Rich and I spotted giant apples trees at the park. There were a couple of them and they were loaded with fruit! So like any normal person would do, we grabbed a couple bags and went apple picking. Free apples, can't complain. 


I had (and still have) no idea what type of apples they were. Mild in taste, a little sweet, kind of tart, with a texture similar to a McIntosh but firmer. 

 First I made an apple crisp with them and found out the hard way that they held up to cooking a little too well. The second time around (Thanksgiving dinner), the texture of the apples were just right. I had cooked them on the stove prior to filling the plate and adding the oat topping and that seemed to work well. Next time though, I think I'll slice the fruit even thinner. 


Since the trees have been untreated and are basically organic, I think we'll continue to harvest from our little secret spot and cooking delicious apple goodies! Emphasis on the cooking part. They may not be as good as my favourite Honey Crisp apples, but I found that letting them sit in the sun makes them a little sweeter. Mmmm.

Review: The Cupcake Shoppe

 Our friends purchased half a dozen cupcakes for dessert from The Cupcake Shoppe, located in the Yonge and Eglinton area. I loved the little booklet included with the cupcakes and the colourful photos inside, but that's about it. 

This is going to be an honest review and I'm not holding back.

Cupcakes To Go!

 Rich and I made these delicious cupcakes (by request) to take to a friends house not too long ago, as we were invited over for dinner. Decadent double dark chocolate vegan cupcakes, totally yummy. I used Rich's mum's recipe for the cake and a made a light "butter cream" using the cooked frosting method, which was veganized using non-dairy milk and buttery sticks. I find that it's less sugary and dense than traditional butter cream and has more of a whipped cream texture. There's just something about sickly sweet and dense frosting that is filled with vegetable shortening, butter and tonne of icing sugar that erks me or makes me scrape it all off, but a thin, thin layer. The worst is when there's way too much shortening in a frosting and it ends up having the mouth-feel of wax, leaving an unsavoury film on the tongue. Aaaaah.

But then again, I don't have a sweet tooth and will usually choose salty snacks over sweet. 
Either way, these cupcakes are delicious and I will always enjoy baking and decorating them over eating them! More for you, right? They're chocolaty, moist, not too heavy and perfect for vegans and non-vegans alike. Trust me, no one would be able to tell they're vegan. 









Leafs vs. Wild, Snap Shots

Last week I was fortunate enough to score two free tickets to see the Toronto Maple Leafs play at the Air Canada Centre! I took my dad with me, as he and I are the only two in the family who bleed blue. We had a blast cheering for our home team and I'm so glad I brought my camera and my telephoto lens! (SHHH...we had seats in the 300's.)

Then the game started and...

...we scored (!!!) within minutes in period one- a wrist shot by Tyler Bozak!

Fourteen and half minutes into period one, Phaneuf got a penalty for tripping.

The Minnisota Wild got a goal in, but then Mason Raymond scored our third goal not long after, making it 3-1 Leafs in the second period. Whoohoo!





Games and things to keep the crowd entertained during second intermission. The guy above won a bunch of goodies including a Leafs sweater!

Then the best thing of the night happened. 
Sure, it was awesome the Leafs were up 3-1, but as the third period was nearing the end, the Wild pulled their goalie. This is when Raymond got a hold of the puck, sped down the rink towards the goal and went to pass to Kessel. 

Kessel saw the puck through, but didn't touch the puck. He let it slide into the net, thus allowing Raymond to bank his second goal of the night. Such an awesome team player!

We had a great night and I can't wait to go watch the Leafs play at the ACC again. Even if I don't there's still plenty of games left in the season and I guarantee you I'll be watching.
