Singapore noodles. They're one of my favourite noodle dishes and if it's on the menu, there's a very good chance that it'll be ordered. I love my curry and I love my noodles!
So the other day, I had a package of chicken breasts in the fridge and I was thinking about what I wanted to make for dinner that evening. It was a little chilly, so I decided on a nice vermicelli noodle soup with Vietnamese marinated chicken. Nice and simple! That is, until I was just about done with the marinade when I realized that we had not even a drop of fish sauce. It was fish sauce or nothing, so change of plans!
With rice noodles already soaking, Singapore noodles were calling out to me. I've never this dish before, but what the hell. I figured I'll do what I usually do- Google, YouTube and wing it. I sliced the chicken up and went to town! There might have been noodles all over the stove from trying to distribute the curry paste evenly throughout the dish, but in the end it was worth the mess!
There's usually BBQ pork ,shrimp, bean sprouts and other goodies mixed in, but I had none and just made do with what I had on hand. Doesn't matter though, you can add whatever you want or don;t want. I only had carrots, onions, greens and chicken, but it was still delicious. :)
I think I might make a batch tomorrow. A vegan version too, since Rich has been reminding me about making him some for weeks now.
