Yep, you read that right.
For dinner last weekend, I made a beef(less) stew loaded with vegetables and delicious barely! Perfect for all in one meal. Rich had mentioned to me that he hadn't had a stew in as long as he could remember. Since Gardein makes really good protein products, I decided to use their
beefless tips in this recipe!

First, I cut the beefless chunks into smaller, more bite sized pieces and browned it on medium high in a little oil. |

In a large pot, I sauteed my mirepoix & potatoes along with some pearl barley and tomato paste followed by lots of vegetable stock and spices. |

Once the barley was nearly done, I added the 'meat' and simmered it for another 10 minutes. Finally I adjusted seasonings to taste once more. |

The final result was a rich and hearty stew! |
I picked up a couple rolls of Pillsbury crescents the other day, so we decided to bake some up for dunking. :D

We added a little granulated garlic and dehydrated veggie mix on to the dough before rolling them up |

Baked in the mini oven, 15 minutes later, golden pillows of deliciousness! |
The crescents were the perfect accompaniment to a large bowl of vegan beef stew. We made a lot of it, so there were leftovers, which were even better reheated the next day! Plus, that meant an easy dinner with minimal clean up which I am always down for.
I prefer to wash a little dishes as possible, haha.
