I made this Caribbean inspired dinner sometime last week while my cough/cold as dying down. I emphasis on the word inspired, because I made the pork marinade completely non-spicy (something about not eating spicy when you're coughing...) and found myself scallion-less, thus I ended up using chives as a substitute. They weren't the fresh kind either. I apologize. Also because I was so congested, I could barely taste a thing so my taste buds were a little upset.
But not to worry, no tears were shed due to disturbing flavours. In fact the broiled pork chops were flavourful, moist and tender despite my drowsy taste buds!
I followed this rice and beans recipe (for the most part) and holy yumminess was it good. I'm pretty sure I could eat this and never get sick of it. It was delicious and packed with goodness.
Would I make this dish or something similar in the future? Heck yes. Especially since I'm sick free and can actually TASTE.
