So easy to make. I prepped the cooker insert the night before and had somebody transfer it from the fridge to the machine before leaving for work (8:30am). I ignored it until just about dinner and we had a feast!
I also made tortillas from scratch, because it's super easy to make and taste awesome. As you can see, we were low on toppings. I had wanted to make a coleslaw...but it just wasn't a coleslaw making and eating kind of day. That's okay though, because the pork was super flavourful and moist- it didn't need much!
At the end of the meal, lets just say there was enough food to feed another 4-5 people! Left overs galore and nobody's complaining.

There are tonnes of recipes on the internet for "slow cooker pulled pork", so I
did some reading and made up my own non-recipe. I got inspired and
winged it. I do this often, I'm sorry.
In the slow cooker pot, add...
- 3 medium onions, sliced, to the bottom
- Pork shoulder, rinsed, dried and dry rubbed*
- Add in a can of ginger ale
- Place insert back into slow cooker
- Turn to low, wait 7-8 hours
- Done
- Pour off excess liquid/fat, saving some of the liquid (1/2 cup) for later
- Shred the pork with two forks, your hands if they are heat proof or tongs
- Add in saved liquid/BBQ sauce a little at a time until it's super moist, but not swimming
- Serve
You can use regular old barbeque sauce, or you can go super fancy and make one. I chose the bottle route, doctoring it up a little with cider vinegar and some spices. I warmed it and served it on the side, after pouring about 1/4 cup into the shredded meat.
*My pork rub is the same as my rib rub and basically consists of: Brown sugar, cumin, salt, black and white pepper, smoked paprika, granulated garlic & onion and oregano. It varies depending on my mood, but this is pretty much it.
