Rich and I made stir fried noodles the other day. We had "Chinese stir fried beef rice noodles" in mind, but really just made do with what we had around the house. We used dried rice noodles (aka. Asian vermicelli) instead of the traditional thicker kind which is usually sold in fresh packs. Instead of beef, TVP chucks were soaked, marinated and cooked on high along with sweet bell peppers, scallions, (smoked) tofu and hot red peppers. We topped it off with lots of fresh bean sprouts and a good sprinkling of sesame seeds for texture. Overall, the dish was pretty good! It wasn't anything like the kind you order at the restaurant, but I'd definitely make something like this again. I would probably omit the smoked tofu though, as I found it to be quite overwhelming. No where on the package did it say it was smoked! Just that it was shredded...but it wasn't.. so I was and still am a bit confused.
I can't wait to make an awesome spicy peanut sauce to slather all over these noodles! Maybe this weekend. After all, I only cooked two thirds of the vermicelli pack. There was enough for 4 servings!
