Last Friday my dad and I decided to make Pad Thai for dinner! (Who doesn't like a large plate of noodles?!) Neither of us had ever made it from scratch before, so after using our internet recipe scouring skills we settled on
this recipe and made a couple of tweaks here and there. There's an okay amount of prep work to do, but it's really easy once you've got the noodles soaked, the sauce made and the meat/veg all cut up and ready to go. You basically just dump it all together and stir. Seriously, not hard at all. Aside from being super yummy and not all that horrible for you, it only cost about $7! It not only served 4 adults, there were enough leftover for a light lunch for two the next day. We used a single package of rice noodles and at first I thought that there wouldn't be enough, but boy, was I ever wrong. Those restaurants are seriously making a sweet profit. :) Next adventure will be making vegan Pad Thai! (I can't imagine it being any harder than making the chicken version...)
