Star shaped noodles make everything tastier!
Poor Richard was sick in bed for three days last week! Like...gross, having the flu and puking kind of sick. Sorry, too much information? I stayed over an extra three days to you know, be an awesome girlfriend and take care of him. So I guess it's that time of year again, where germs are in full swing... what better way to survive it than to have chicken noodle soup? I made this vegan friendly chicken noodle soup for Rich and even made extra for me. It was way good and it only took 10 minutes!
You'll need..
Water
Vegetarian chicken broth (powder)
Extra vergin oilive oil
Vegetables of your choice, I used onions and carrots. Didn't have celery, no mirepoix :(
Noodles, I used the star shaped variety
Salt & pepper to taste, add herbs if you want
Heat up a small amount of oil in a pot on medium, add in your onions and other vegetables. Cook until your onions are translucent, pour in your desired amount of water, chick'n boullion powder to taste, noodles and herbs. cover and simmer until the noodles are done and do a taste test. Salt & pepper, serve.
* Adding tomatoes or tomato paste would be nice, as would potatoes or rice if you don't have noodles/pasta. If you want to add protien, lentils or beans would be awesome too!
