It was my night to make dinner last Wednesday, and we were having steak! So to lighten up the meal a little, I made a cucumber salad with a refreshing dill & yogurt vinaigrette accented with some sweet onions. It's a great way to use up whatever vegetables you have left in the fridge. If I had some sweet bell peppers, corn kernels and maybe some navy beans or chickpeas, it'd make for a pretty substantial lunch!
Of course, being in the warmer months corn is coming into season! Yum. Since my BBQ is old and completely busted...I ended up broiling them in my brand spanking new toaster oven (which I will be posting about later). Works like a charm, plus cooking out doors when it's rainy..is no good.
Garlic bread is always welcomed at my dinners. Garlic buttery goodness. Plus, it's so damn easy to make! Don't have the fresh stuff? Use granulated garlic. A scoop of butter (or margarine), garlic, salt and pepper. Combine it and smother it all over bread. I like adding some dehydrated vegetable bits for an extra kick. Then toast it with or without cheese...soooo yummy..
Lastly, protein. Juicy, meaty, steak. The main course. Check out that marbling!! Again, no BBQ so these babies were seared in a hot pan then finished in the (mini) oven. So easy. But of course, before cooking I had to add a little more zing. This is when Club House's La Grille Marinades came into play! Spoon and rub, then cook. Our tummies were happy, happy! :D
